Serving Up Delicious Dishes at Eagle’s Trace

For Louis Kirchem, one of the unexpected joys of living at Eagle’s Trace, the Erickson Senior Living community in West Houston, Tex., has been making new friends over a great meal.

“I’m also eating more healthy, balanced meals,” he adds.

Thanks to the Signature Dining program, Louis and his Eagle’s Trace neighbors savor delicious, cooked-to-order entrees made with the freshest ingredients.

And because the on-campus restaurants feature a variety of local favorites, modern takes on classic dishes, and innovative fare, there’s always something new to try!

Lots of choices
Dining choices at Eagle’s Trace range from casual cafes and pubs to full-service restaurants, where specialties are prepared and plated with care.

“Each venue offers a wide variety, from appetizers, soups, and salads to entrees and desserts–all of which change on a regular basis,” Louis says. “There is also a catering department for private parties and events.”

Start your morning at Eagle’s Roost with a protein-packed breakfast. Or stop by later for lunch or dinner to enjoy a salad, savory sandwich, pizza, or tacos. Waterloo Cafe is the perfect place for a casual lunch and friendly conversation. Here, you’ll find a variety of menu items, including spinach mushroom salad, shrimp po’boy sub, and Thai curry. And don’t forget the hush puppies!

Enjoy Stetson’s full-service steakhouse setting with indoor seating, or venture onto the patio for al fresco dining. Try the grilled filet mignon, salmon, or grilled Hawaiian chicken with a side of broccoli crunch salad.

To sample a tantalizing menu featuring beef, pasta, and seafood entrees, head over to the Garden Room. Meet your friends for a craft brew at Lafitte’s Pub and stay for some classic pub fare, including appetizers and sandwiches. And, as Dining Services Director Michael Heilman notes, “You can hang out and watch the game, too!”

And before the sun sets over the community’s scenic, 70-acre campus, head over to The Perch, a lakeside cocktail bar, to unwind and take in the view.

An innovative experience
Want a different restaurant experience? Try The Cookhouse. Watch expert chefs prepare your meal in the open, exhibition-style kitchen in an upscale environment.

“My favorite restaurant is definitely The Cookhouse, under the leadership of General Manager Santiago Castaneda and Executive Chef Fernanda Caro,” Louis says. “Their team provides a wonderful dining experience and an extensive variety of menu options with excellent flavor–supported by great service.”

“That’s no surprise,” says Heilman. “When we collect feedback from residents, The Cookhouse has been our highest scoring restaurant. Regional comfort food, such as brisket and crab cakes, have been tremendously popular there. And the extra care put into plate presentation is often pointed out by residents.”

Powerful partnership
To ensure resident satisfaction at each of these unique eateries, Heilman and his team partner with the Resident Advisory Council’s dining committee.

“We have each committee member assigned to a different restaurant each month. They not only share their own experiences, but those of their neighbors,” Heilman explains. “New and popular menu items and helpful suggestions are always discussed.”

He credits this consistent collaboration and his team’s dedication for the restaurants’ success.

“Our Dining Services team truly has a passion for delivering great dining experiences,” Heilman says. “Everyone wakes up looking forward to the workday ahead!”

Louis, aware of all the work that goes on behind the scenes, is proud to live in a community that devotes so much time and effort to dining.

“I appreciate all that Dining Services does to improve my quality of life here at Eagle’s Trace,” Louis says. “The food quality is outstanding, often exceeding my expectations. I cannot imagine it being done better anywhere else!”

More to mealtime
Since moving to Eagle’s Trace in 2023, Louis has enjoyed many delicious, nutritious meals and meaningful conversations with newfound friends at restaurants just steps from his front door.

“It’s nice not having to plan, shop, and cook my own meals anymore,” says Louis. “Now, I am healthier and have more meal choices at my disposal–and it’s all conveniently located here, at my home for life.”
